Open-Minded Tuna Melt

Ingredients
  • 1 (6-ounce) can water-packed tuna fish
  • 1 stalk celery, finely diced
  • 3 tablespoons light mayonnaise
  • 2 teaspoons lemon juice
  • 2 slices multi-grain bread, toasted
  • 1 small tomato, diced

Directions
1. In a medium bowl, using a whisk, crumble tuna so it is no longer in big chunks. Add chopped celery, mayonnaise and lemon juice.
2. Place slices of bread on a cutting board and put half of the tuna mixture on each slice of bread. Spread evenly on top.
3. Sprinkle tomatoes and then cheese evenly on top of each slice of bread.
4. Toast under broiler or in toaster oven until cheese is melted.
