In Good Health Breakfast Quesadilla

Ingredients
  • 2 large eggs
  • 1/2 cup low-fat cheddar or any low-fat cheese, grated
  • 2 (6") soft tortillas, corn or whole-wheat
  • 1 tablespoon red onion, diced
  • Canola oil spray
  • salsa

Directions
1. Wrap tortillas in a clean damp cloth and microwave for 30 seconds. Set aside.
2. Spray non-stick skillet with canola spray, add onions and cook until lightly browned.
3. Add eggs, cook until eggs are firm on both sides.
4. Sprinkle cheese on top of eggs and slide onto tortilla.
5. Put second tortilla on top and cut in half.
6. Serve with salsa.

Recipe hints: you can add other cooked vegetables to this recipe such as bell peppers or mushrooms. Sauté them with the red onion.
